Ingredients

  • 1 pound ground beef
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 cups cauliflower rice
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup beef broth
  • 0.5 cup heavy cream
  • 2 tablespoons soy sauce
  • 0.5 teaspoon xanthan gum
  • 4 large eggs
  • 2 stalks green onions

Directions

Step 1

In a bowl, season the ground beef with salt, pepper, and garlic powder. Mix until well combined, then shape into 4 equal patties.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the beef patties for about 3-4 minutes on each side until they are browned and cooked through. Remove and set aside.

Step 3

In the same skillet, add another tablespoon of olive oil and sauté the cauliflower rice until tender, about 5 minutes. Season with a pinch of salt and pepper. Remove from the skillet and divide among serving plates.

For the gravy, melt 2 tablespoons of butter in the skillet. Add the mushrooms and cook until they are browned and tender, about 5-7 minutes.
