Ingredients

  • 1 medium head Cauliflower
  • 1 cup Lobster meat, cooked and chopped
  • 2 large Eggs
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce (or tamari for gluten-free)
  • 2 tablespoons Coconut oil or avocado oil
  • 3 stalks Green onions, chopped
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Peas (optional for keto)
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the cauliflower rice. Remove the stem and leaves from the cauliflower, chop it into small florets, and pulse them in a food processor until they resemble rice grains. Set aside.

Step 2

In a large skillet or wok, heat one tablespoon of oil over medium-high heat. Crack the eggs into the skillet and scramble them until just set. Remove from the skillet and set aside.
