Ingredients

  • 1.5 cups almond flour
  • 2 cups shredded cheddar cheese
  • 1 large egg
  • 1 pound ground beef
  • 2 tablespoons taco seasoning (sugar-free)
  • 0.5 cup sour cream
  • 1 large avocado
  • 1 tablespoon lime juice
  • 1 cup shredded lettuce
  • 0.25 cup sliced jalapeños
  • 0.5 cup diced tomatoes
  • 0.25 cup black olives, sliced
  • 0.25 cup cilantro, chopped
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a bowl, mix the almond flour, 1 cup of shredded cheddar cheese, egg, and salt until a dough forms.

Step 3

Roll the dough between two sheets of parchment paper until it's about 1/8-inch thick.

Step 4

Transfer the dough on parchment paper to a baking sheet. Using a pizza cutter, slice the dough into chip-sized triangles.

Step 5

Bake in preheated oven for 10-12 minutes or until golden brown and crispy. Remove and set aside to cool.

Step 6

In a skillet over medium heat, cook the ground beef until no longer pink, about 7-10 minutes. Drain excess fat.

Step 7

Add taco seasoning to beef and mix well. Let it simmer for another 2-3 minutes. Remove from heat.

Step 8

In a small bowl, mash the avocado with lime juice and a pinch of salt to create a simple guacamole.

Step 9

On a large serving platter, lay out the baked keto chips.

Step 10

Sprinkle the remaining cheddar cheese over the chips, followed by the seasoned ground beef.

Step 11

Top with sour cream, guacamole, shredded lettuce, jalapeños, diced tomatoes, black olives, and chopped cilantro as per your preference.

Step 12

Serve immediately and enjoy your Keto Loaded Nachos with all the toppings!
