Step 1

Start by washing the cherries thoroughly under running water. Pit the cherries and cut them in half.

In a medium saucepan over medium heat, combine the pitted cherries, powdered erythritol, lemon juice, and water.

Bring the mixture to a simmer, stirring occasionally, for about 10 minutes or until the cherries start to break down and release their juices.

Using a potato masher or the back of a spoon, mash the cherries to your desired consistency. If you prefer a smoother jam, use an immersion blender.
