Ingredients

  • 1 large head Cauliflower
  • 1 medium Lemon
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Toasted sesame seeds

Directions

Step 1

Start by breaking the cauliflower into florets. Rinse them under cold water and let them dry completely.

Step 2

Using a food processor, pulse the cauliflower florets into rice-sized pieces. You can do this in batches to make sure you do not over-process the cauliflower.

Step 3

Juice the lemon and set aside the juice. Zest the lemon if desired for extra flavor.

Step 4

Peel and mince the garlic cloves.

Step 5

In a large skillet, heat the olive oil over medium heat.

Step 6

Add minced garlic to the skillet and sauté for about 1 minute, or until fragrant.

Step 7

Add the riced cauliflower to the skillet. Stir well to combine with the garlic.

Step 8

Sprinkle the turmeric powder, salt, and pepper over the cauliflower rice. Stir well to ensure the spices are evenly distributed.

Step 9

Pour the lemon juice over the cauliflower rice and stir. Cook on medium heat for about 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.

Step 10

Chop the fresh parsley finely.

Step 11

Once the cauliflower rice is done, remove it from heat and sprinkle the chopped parsley and toasted sesame seeds over the top.

Step 12

Gently stir the parsley and sesame seeds into the rice.

Step 13

Taste and adjust seasoning if necessary.

Step 14

Serve hot as a side dish or a light main.
