Ingredients

  • 0.5 cup Erythritol sweetener

  • 1.5 tablespoons Poppyseeds
  • 1 tablespoon Lemon zest

  • 3 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 0.25 cup Lemon juice
  • 0.25 cup Melted coconut oil
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

Step 2

In a large bowl, mix together almond flour, erythritol, baking powder, poppyseeds, lemon zest, and salt. Set aside.

Step 3

In a separate bowl, whisk the eggs until they are well beaten.
