  • 500 grams ground beef
  • 200 grams cauliflower rice
  • 1 small, diced onion
  • 3 cloves, minced garlic
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley
  • 2 tablespoons lemon juice

Directions

Step 1

Begin by washing the zucchinis thoroughly. Cut off the tops and use a corer or a small spoon to carefully hollow out the center of each zucchini, leaving about 0.5 cm thickness on the walls.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the diced onion and minced garlic; sauté until the onion is translucent.

Step 3

Add the ground beef to the skillet, breaking it up with a spoon. Cook until the beef is browned.

Step 4

Stir in the cauliflower rice, tomato paste, ground cumin, cinnamon, allspice, salt, and black pepper. Cook for an additional 5 minutes.
