Ingredients

  • 12 large eggs Egg whites
  • 1 cup Roasted red pepper
  • 1 cup Spinach
  • 1 cup Feta cheese, crumbled
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Baking powder

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.

Step 2

Roughly chop the roasted red pepper and spinach, and set aside.

Step 3

In a large mixing bowl, whisk the egg whites until frothy. Add salt, black pepper, and baking powder, and mix until well combined.

Step 4

Fold in the chopped roasted red pepper, spinach, and feta cheese into the egg white mixture.

Step 5

Evenly distribute the egg mixture into the prepared muffin tin, filling each cup about three-quarters full.
