Ingredients

  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 0.75 cup Boiling water
  • 0.33 cup Butter, melted
  • 1 pound Ground beef
  • 1 Small onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 0.75 teaspoon Salt
  • 0.5 cup Water
  • 2 tablespoons Chopped fresh cilantro

Directions

Step 1

In a large bowl, combine the almond flour, coconut flour, xanthan gum, and salt. Mix well.

Step 2

Pour in the boiling water and melted butter. Stir quickly until a dough forms.

Step 3

Knead the dough for a few minutes until it is smooth. Wrap the dough in plastic wrap and let it rest for 15 minutes.

Step 4

In another bowl, prepare the filling by combining ground beef, chopped onion, minced garlic, ground coriander, ground cumin, black pepper, salt, and water. Mix thoroughly and then stir in the chopped cilantro.

Step 5

Divide the dough into small balls, roughly the size of a golf ball. Roll each ball into a thin circle of about 4-5 inches in diameter.

Step 6

Place a tablespoon of the meat filling in the center of each dough circle.

Step 7

To shape the khinkali, begin pinching the edges of the dough circle together over the filling to create a pleated pattern, ensuring the top is securely sealed.

Step 8

Bring a large pot of salted water to a gentle boil.

Step 9

Carefully drop the khinkali into the boiling water, stirring occasionally to prevent sticking.

Step 10

Cook for about 10-12 minutes, or until the dumplings float to the surface and the meat is cooked through.

Step 11

Using a slotted spoon, remove the khinkali from the pot and let them drain slightly.

Step 12

Serve hot, with a sprinkle of black pepper if desired.
