Heat the ghee or coconut oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add minced garlic, grated ginger, and chopped green chili (if using). Cook for another minute until fragrant.
Stir in the chopped tomato and cook until it softens and blends with the onions, around 5 minutes.
Add ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Mix well and cook for another minute to let the spices bloom.
