Ingredients

  • 200 g Almond flour
  • 50 g Coconut flour
  • 150 g Butter
  • 1 tsp Xanthan gum
  • 100 g Cream cheese
  • 1 large Egg
  • 1 tsp Baking powder
  • 200 g Sugar-free kaya (coconut jam)
  • 1 Egg yolk

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, and xanthan gum. Mix thoroughly.

Step 3

In a small saucepan over low heat, melt the butter and cream cheese together. Stir until smooth.

Step 4

Add the melted butter and cream cheese mixture to the dry ingredients and combine well.

Step 5

Stir in the large egg and baking powder until a dough forms. If the dough is too sticky, add a little more almond flour.

Step 6

Divide dough into 8 equal portions and roll each into a ball.

Flatten each ball into a disc shape using your hands or a rolling pin, approximately 3mm thick.

Place a heaping teaspoon of sugar-free kaya in the center of each disc.

Carefully fold the disc over the filling to form a half-moon shape. Seal the edges by pinching them together or pressing with a fork.

Place the kaya puffs on the prepared baking sheet.

Beat the egg yolk with a splash of water to form an egg wash. Brush each puff with the egg wash.
