Ingredients

  • 2 whole (about 8 oz each) Chicken breasts
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Almond flour
  • 0.5 cup (grated) Parmesan cheese
  • 2 large Eggs
  • 0.25 cup Coconut oil
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Prepare the chicken by placing each breast between two pieces of plastic wrap. Gently pound them to 1/2-inch thickness for even cooking.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

In a shallow dish, mix together the almond flour, grated Parmesan cheese, paprika, and garlic powder.

Step 4

In another shallow dish, beat the eggs.

Step 5

Heat coconut oil in a large skillet over medium heat. Heat enough to cover the bottom of the pan.

Step 6

Dip each chicken breast into the egg mixture, allowing the excess to drip off.

Step 7

Then press the chicken into the almond flour mixture, ensuring each piece is fully coated.

Step 8

Gently place the coated chicken breasts into the hot coconut oil in the skillet. Avoid crowding the pan.

Step 9

Cook for about 4-5 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (73°C).

Step 10

Transfer the cooked chicken to a plate lined with paper towels to drain any excess oil.

Step 11

Serve the Keto Katsu Chicken hot. Consider pairing with a keto-friendly tonkatsu sauce or mayonnaise for dipping.
