  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Red bell pepper, cut into 1-inch pieces
  • 1 medium Yellow bell pepper, cut into 1-inch pieces
  • 1 medium Red onion, cut into 1-inch pieces
  • 1 medium Zucchini, sliced into thick rounds
  • 1 cup Cherry tomatoes
  • 8 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Cut the pork shoulder into 1-inch cubes and set aside.

Step 3

In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to form the marinade.
