Ingredients

  • 1.5 cups almond flour
  • 0.25 cups coconut flour
  • 0.33 cups erythritol
  • 1 teaspoon baking powder
  • 0.5 teaspoon xanthan gum
  • 0.25 teaspoon salt
  • 4 ounces cream cheese
  • 1.5 cups mozzarella cheese, shredded
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt. Mix well and set aside.
