Ingredients

  • 500 grams Cauliflower rice
  • 150 grams Mozzarella cheese
  • 50 grams Grated Parmesan cheese
  • 60 grams Almond flour
  • 2 large Eggs
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 leaves Fresh basil leaves
  • 60 milliliters Olive oil
  • 500 milliliters Water

Directions

Step 1

In a medium saucepan, bring 500 milliliters of water to a boil. Add the cauliflower rice and blanch it for about 3 minutes, then drain well to remove excess moisture.

Step 2

Transfer the drained cauliflower rice to a large mixing bowl. Add the grated Parmesan cheese, 1 egg, Italian seasoning, salt, and black pepper. Mix well until all ingredients are combined.

Step 3

Cut the mozzarella cheese into small cubes about 1 cm in size.

Step 4

Take a small portion of the cauliflower mixture and flatten it in your hand. Place a cube of mozzarella in the center and wrap the mixture around it to form a ball. Repeat this process until all the mixture is used.

In a small bowl, beat the remaining egg. In another bowl, place the almond flour for coating.

Dip each rice ball into the beaten egg and then roll it in the almond flour to fully coat.
