Ingredients

  • 2 cups Yellow Squash (cubed)
  • 1 cup Cauliflower (riced)
  • 2 tablespoons Coconut Oil
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger Paste
  • 1 medium Tomato (chopped)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Garam Masala
  • 0.5 teaspoon Red Chili Powder
  • 1 teaspoon Salt
  • 2 cups Water
  • 2 tablespoons Fresh Cilantro (chopped)
  • 1 tablespoon Lemon Juice
  • 1 small Green Chilies (optional, chopped)

Directions

Step 1

Heat coconut oil in a large pan over medium heat.

Step 2

Add cumin seeds and let them splutter for about 30 seconds.

Step 3

Stir in the chopped onion, garlic, and ginger paste; sauté until the onion turns golden brown.

Add the chopped tomato and cook until soft, about 4-5 minutes.

Stir in the turmeric, coriander powder, garam masala, red chili powder, and salt. Mix well to combine the spices with the onion mixture.
