  • 4 fillets Mackerel fish
  • 2 tablespoons Coconut oil
  • 2 stalks Lemongrass stalk
  • 1 inch Ginger
  • 1 teaspoon Turmeric powder
  • 2 chilis Red chili
  • 3 cloves Garlic
  • 4 pieces Shallots
  • 3 leaves Bay leaves
  • 4 leaves Kaffir lime leaves
  • 4 cups Water
  • 2 tablespoons Fish sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 piece Lime
  • 0.5 cup Fresh cilantro

Directions

Step 1

Clean and pat dry the mackerel fillets. Set aside.

Step 2

Heat the coconut oil in a large pot over medium heat.

Step 3

Bruise the lemongrass stalks and slice the ginger thinly.

Step 4

Add the lemongrass, ginger, turmeric, and sliced shallots to the pot and sauté for about 3 minutes or until fragrant.
