  • 1 medium red bell pepper, chopped

  • 5 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 medium zucchini, diced
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Cut the beef chuck into 1-inch cubes, removing any excessive fat.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches to avoid overcrowding, and sear them until they're browned on all sides. Remove the beef from the pot and set aside.

Step 3

In the same pot, add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and chopped red bell pepper, cooking for an additional 3 minutes.
