Ingredients

  • 1.5 cups almond flour
  • 0.25 cups coconut flour
  • 0.5 cups erythritol
  • 1 tablespoon baking powder
  • 0.25 teaspoons salt
  • 1 teaspoon granulated gelatin
  • 3 large eggs
  • 0.5 cup unsweetened almond milk
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 0.25 cup keto-friendly honey substitute
  • 0.5 teaspoon cinnamon (optional, for dusting)
  • 0.25 cup powdered erythritol (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with butter or non-stick spray.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, salt, and gelatin until well combined.

Step 3

In a separate medium-sized bowl, beat the eggs and then stir in the unsweetened almond milk, melted butter, vanilla extract, and keto-friendly honey substitute.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until a smooth batter forms.

Step 5

Evenly distribute the batter into the prepared donut pan, filling each cavity about 3/4 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Step 7

Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 8

Once cooled, dust the donuts with powdered erythritol and a light sprinkle of cinnamon, if desired, before serving.
