Ingredients

  • 4 pieces chicken thighs, skin-on, bone-in
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 0.25 cup sugar-free honey substitute
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken thighs with salt and pepper on both sides.

Step 3

In a large oven-safe skillet, heat olive oil over medium-high heat.

Step 4

Place the chicken thighs skin-side down in the skillet and cook until the skin is crisp and golden, about 5 minutes.

Step 5

Flip the chicken and cook for an additional 3 minutes, then remove the chicken from the skillet and set aside.

Step 6

Reduce the heat to medium and add the butter to the same skillet.

Step 7

Once the butter has melted, add the minced garlic and sauté until fragrant, about 1 minute.

Step 8

Stir in the sugar-free honey substitute and apple cider vinegar, mixing until well combined.

Step 9

Sprinkle in the dried thyme and paprika, stirring to integrate the flavors.

Step 10

Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top.

Step 11

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Step 12

Remove the skillet from the oven and let the chicken rest for 5 minutes.

Step 13

Garnish with chopped fresh parsley before serving.

Step 14

Serve the Keto Honey Butter Chicken with your choice of keto-friendly sides.
