Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 3 large Eggs
  • 2 ounces Cream cheese
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered erythritol
  • 2 tablespoons Sugar-free honey substitute
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well to ensure there are no lumps.

Step 3

In a separate microwave-safe bowl, melt the unsalted butter. Once melted, mix in the cream cheese until smooth.

Step 4

In another bowl, whisk the eggs. Add in the vanilla extract, powdered erythritol, sugar-free honey substitute, and apple cider vinegar.

Step 5

Pour the egg mixture into the melted butter and cream cheese mixture. Mix until well blended.

Step 6

Gradually add the wet ingredients into the dry ingredients, stirring until a thick dough forms.

Step 7

Use a spoon or cookie scoop to drop dollops of dough onto the prepared baking sheet, leaving some space between each.

Step 8

Bake in the preheated oven for about 12 to 15 minutes or until the biscuits are golden brown on the edges and slightly firm to the touch.

Step 9

Allow them to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.

Step 10

Serve warm, or store in an airtight container for up to 3 days.
