Ingredients

  • 2 cups Full-fat Greek yogurt
  • 1 cup Almond flour
  • 0.5 cup Erythritol sweetener
  • 0.25 cup Coconut oil
  • 2 teaspoons Vanilla extract
  • 0.5 cup Chopped nuts (e.g., almonds, walnuts)
  • 1 cup Frozen mixed berries
  • 0.25 cup Unsweetened shredded coconut

Directions

Step 1

Line an 8x8-inch baking dish with parchment paper, leaving some overhang to easily lift the bars once set.

Step 2

In a mixing bowl, combine the almond flour and erythritol sweetener. Stir until well mixed.

Step 3

Add the melted coconut oil to the almond flour mixture and mix until combined, forming a crumbly dough.

Step 4

Press the mixture evenly into the bottom of the prepared baking dish to create a crust. Place in the freezer to set for about 10 minutes.
