Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Granulated erythritol
  • 0.25 cup Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Cinnamon
  • 0.25 cup Powdered erythritol
  • 0.5 cup Coconut oil (for frying)

Directions

Step 1

In a medium bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Set aside.

Step 2

In a large bowl, beat the granulated erythritol and butter together until light and fluffy.

Step 3

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

Gradually add the flour mixture to the wet ingredients, alternating with heavy cream, and mix until the dough is smooth and well combined.

Step 5

Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.

Step 6

Divide the dough into 24 pieces and roll each piece into a ball.

Step 7

In a deep skillet or pot, heat the coconut oil over medium-high heat until it reaches 350°F (175°C).

Step 8

Fry the dough balls in batches, ensuring not to overcrowd the pan, turning them occasionally until golden brown and cooked through, about 3-4 minutes per batch.

Step 9

Remove the cooked tim bits with a slotted spoon and drain them on a paper towel-lined plate.

Step 10

In a small bowl, mix the cinnamon and powdered erythritol together.

Step 11

Once the tim bits are cool enough to handle, roll each one in the cinnamon and powdered erythritol mixture to coat evenly.

Step 12

Serve warm or at room temperature. Enjoy your guilt-free, keto-friendly treat!
