Ingredients

  • 150 grams Dried soybeans
  • 1 liter Filtered water
  • 10 drops Liquid stevia
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Rinse the dried soybeans under cold water to remove any debris. Place them in a large bowl and cover with plenty of water. Soak the soybeans overnight or for at least 8 hours until they have doubled in size.

Step 2

After soaking, drain and rinse the soybeans thoroughly. Transfer the soybeans into a blender.

Step 3

Add 1 liter of filtered water to the blender with the soybeans. Blend on high speed until the mixture is smooth and creamy.

Step 4

Pour the blended soybean mixture into a large saucepan through a fine mesh strainer or cheesecloth over a pot. Squeeze out as much liquid as possible, discarding the solid pulp left behind (okara).

Step 5

Place the saucepan over medium heat and bring the liquid to a gentle boil, stirring occasionally to prevent burning. Once boiling, reduce the heat to low and simmer for about 20 minutes. Stir continuously to prevent sticking.

Step 6

Remove from heat and stir in liquid stevia, vanilla extract, and salt for flavor. Taste and adjust sweetness if necessary.

Step 7

Allow the soy milk to cool before transferring it to a clean glass bottle or jar. Refrigerate and consume within 3-4 days.
