Ingredients

  • 120 g unsweetened shredded coconut
  • 80 g almond flour
  • 50 g powdered erythritol
  • 60 ml coconut oil, melted
  • 60 ml unsweetened coconut milk
  • 1 tsp vanilla extract
  • 20 whole almonds
  • 20 g extra shredded coconut for rolling

Directions

Step 1

In a large mixing bowl, combine the unsweetened shredded coconut, almond flour, and powdered erythritol. Stir until well mixed.

Step 2

Add the melted coconut oil, coconut milk, and vanilla extract to the dry ingredients. Mix until the mixture becomes a dough-like consistency and starts to hold together when pressed.

Step 3

Take a small amount of the mixture, about a tablespoon, and flatten it slightly in your palm.

Step 4

Place a whole almond in the center of the mixture, then carefully mold the coconut mixture around the almond to form a ball. Make sure the almond is completely enclosed.
