Ingredients

  • 60 grams Almond flour
  • 80 grams Unsweetened shredded coconut
  • 60 milliliters Coconut oil
  • 30 grams Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 18 pieces Whole almonds
  • 100 milliliters Coconut cream
  • 50 grams Desiccated coconut (for rolling)

Directions

Step 1

In a medium-sized saucepan, gently melt the coconut oil over low heat, then add the erythritol and stir until dissolved.

Step 2

Remove the saucepan from the heat and stir in the almond flour and unsweetened shredded coconut. Mix thoroughly to combine all the ingredients.

Step 3

Add the vanilla extract and coconut cream to the mixture, stirring well to achieve a consistent batter.

Step 4

Allow the mixture to cool for about 10 minutes until it firms up slightly, making it easier to handle.

Step 5

Using your hands, take a small amount of the mixture and flatten it into a disc. Place one whole almond in the center and form the mixture into a ball around the almond.

Step 6

Roll each formed ball in the desiccated coconut to coat the outside. Repeat with the remaining mixture and almonds to make approximately 18 balls.

Step 7

Once all the balls are formed and coated, place them on a tray lined with parchment paper.

Step 8

Refrigerate the Keto Rafaellos for at least 1 hour before serving to allow them to firm up.
