Ingredients

  • 300 grams raw hazelnuts
  • 100 grams sugar-free dark chocolate
  • 2 tablespoons cocoa powder
  • 3 tablespoons erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (356°F). Spread the raw hazelnuts on a baking sheet in a single layer.

Step 2

Roast the hazelnuts in the oven for 10 to 15 minutes, or until the skins are dark and starting to crack. Stir once halfway through to prevent burning.

Step 3

Remove the hazelnuts from the oven and let them cool for a few minutes. Then, wrap them in a clean kitchen towel and rub vigorously to remove most of the skins. It’s okay if some skins remain.

Step 4

Melt the sugar-free dark chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.

Step 5

In a food processor, add the peeled hazelnuts and blend on high speed until they turn into a fine meal. Scrape down the sides as needed.

Step 6

Continue processing until the hazelnuts begin to release their oil and form a smooth butter. This may take about 5 to 8 minutes.

Step 7

Add the melted chocolate, cocoa powder, erythritol, vanilla extract, coconut oil, and salt to the food processor. Blend until well combined and smooth.

Step 8

Taste and adjust sweetness if necessary, blending in more sweetener as desired.

Step 9

Transfer the Nutella to a jar or airtight container and allow it to cool completely. It will thicken as it cools.

Step 10

Store your keto Nutella at room temperature for up to 1 week or in the fridge for up to 1 month. Stir before using to re-incorporate oils.
