Ingredients

  • 500 g Ground lamb
  • 250 g Ground beef (80% lean)
  • 2 tbsp Harissa paste
  • 2 tsp Ground cumin
  • 1 tsp Ground coriander
  • 2 tsp Sweet paprika
  • 1 tsp Smoked paprika
  • 0.5 tsp Cayenne pepper
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 3 units Garlic cloves (minced)
  • 2 tbsp Fresh mint leaves (finely chopped)
  • 2 tbsp Fresh cilantro (finely chopped)

Directions

Step 1

In a large mixing bowl, combine ground lamb and ground beef. Mix thoroughly by hand until the meats are well integrated.

Step 2

Add harissa paste, ground cumin, ground coriander, sweet paprika, smoked paprika, cayenne pepper, salt, and black pepper to the meat mixture. Mix well to ensure spices are evenly distributed.

Step 3

Stir in minced garlic, chopped mint leaves, and chopped cilantro into the meat and spice mixture. Knead the mixture by hand until it is homogenous and the herbs and garlic are evenly distributed throughout.

Step 4

Divide the sausage mixture into even portions, roughly the size of a meatball, and then roll each portion into a short sausage shape, about 4 inches long. Repeat until all the mixture is shaped into sausages.

Step 5

Heat a large skillet or grill pan over medium-high heat. Once hot, add the Merguez sausages, cooking them for about 8-10 minutes, turning occasionally until browned on all sides and cooked through.

Step 6

To ensure they are cooked, the internal temperature should reach 160°F (71°C).

Step 7
