Ingredients

  • 2 tablespoons Almond flour
  • 1 tablespoon Coconut flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 large Egg
  • 1.5 tablespoons Butter
  • 0.5 cup Shredded cheddar cheese
  • 2 slices Canadian bacon
  • 1 tablespoon Heavy cream

Directions

Step 1

In a small microwave-safe bowl, mix together the almond flour, coconut flour, baking powder, and salt.

Step 2

Add 1 egg and 1 tablespoon of melted butter to the flour mixture and stir until well combined, forming a batter.

Step 3

Microwave the bowl containing the batter for 90 seconds or until the muffin is firm and cooked through.

Step 4

Carefully remove the muffin from the bowl, let it cool slightly, then slice it in half horizontally to form two slices.

Step 5

In a small frying pan, melt the remaining 0.5 tablespoon of butter over medium heat.
