Ingredients

  • 8 cups Water
  • 2 cups Mixed berries (such as raspberries, blueberries, and blackberries)
  • 1 cup Rhubarb, chopped
  • 0.25 cup Erythritol or any keto-friendly sweetener
  • 1 teaspoon Lemon peel, grated
  • 1 teaspoon Vanilla extract
  • 1 Cinnamon stick

Directions

Step 1

Begin by rinsing the mixed berries and chopped rhubarb under cold water.

Step 2

In a large pot, combine 8 cups of water, the mixed berries, chopped rhubarb, erythritol, lemon peel, and cinnamon stick.

Step 3

Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 20 minutes. Stir occasionally to help dissolve the sweetener.

Step 4

After 20 minutes, remove the pot from heat and add the vanilla extract.

Step 5

Allow the kompot to cool to room temperature. This will allow the flavors to meld together beautifully.

Step 6

Once cooled, strain the kompot through a fine-mesh sieve into a large pitcher or bowl to remove the fruit solids, pressing gently to extract all the juices.

Step 7

Refrigerate the kompot until chilled, or serve immediately over ice for a cool, refreshing drink.

Step 8

Store any leftovers in a tightly sealed container in the refrigerator for up to a week.
