  • 100 grams Pork fat
  • 2 tablespoons Erythritol
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Vinegar
  • 5 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Celery seed
  • 1 package Natural sausage casings (optional)

Directions

Step 1

In a large bowl, combine the ground pork and pork fat until well mixed.

Step 2

Add erythritol, coconut aminos, vinegar, minced garlic, salt, ground black pepper, paprika, onion powder, and celery seed to the pork mixture.

Step 3

Mix all ingredients thoroughly by hand until evenly distributed.

If using natural sausage casings, soak them in warm water for about 30 minutes, then rinse thoroughly under running water.

Stuff the pork mixture into the casings, making links of desired length, or form into patties if you prefer not to use casings.
