Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw pecans
  • 1 cup Raw walnuts
  • 1 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 0.25 cup Coconut oil
  • 0.25 cup Erythritol or other keto-friendly sweetener
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

Roughly chop the almonds, pecans, and walnuts. Add them to a large mixing bowl.

Step 3

Add the pumpkin seeds, sunflower seeds, shredded coconut, chia seeds, and flaxseed meal to the nuts in the mixing bowl.

In a small saucepan, melt the coconut oil over low heat. Once melted, stir in the erythritol, cinnamon, vanilla extract, and salt until well combined.
