In a mixing bowl, combine the almond flour, baking powder, and xanthan gum. Set aside.
In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for about 1 to 1.5 minutes, stirring every 30 seconds, until the mixture is completely melted and smooth.
To the cheese mixture, add the almond flour mixture, egg, and almond milk. Mix well until a dough forms. Knead the dough with your hands until it is smooth and well combined.
