Ingredients

  • 2 cups Almond flour
  • 1/4 cup Coconut flour
  • 1 tablespoon Baking powder
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Salt
  • 1/3 cup Unsalted butter, melted
  • 1/2 cup Erythritol sweetener
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/3 cup Almond milk, unsweetened
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Erythritol sweetener

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a standard 9x5 inch loaf pan with butter or line it with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, baking powder, ground cinnamon, and salt. Whisk until evenly mixed.

Step 3

In another bowl, whisk together the melted butter and 1/2 cup erythritol until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with almond milk, starting and ending with the dry ingredients. Mix until just combined.

To make the cinnamon swirl, in a small bowl, mix 1 teaspoon of ground cinnamon with 2 tablespoons of erythritol.
