Ingredients

  • 1 pound Ground beef
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 8 ounces Cream cheese, softened
  • 2 cups Cheddar cheese, shredded
  • 1 4-ounce can Green chiles, drained
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro (for garnish)
  • 1 Jalapeños, sliced (optional for garnish)

Directions

Step 1

In a large skillet over medium heat, add the ground beef and cook until it's browned, about 5 to 7 minutes. Break up the meat with a spatula as it cooks.

Step 2

Add the finely chopped onion and minced garlic to the skillet with the beef. Cook for about 3 minutes until the onion becomes translucent and the garlic is fragrant.

Step 3

Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another minute to toast the spices.

Step 4

Add the tomato paste and beef broth to the skillet. Stir well to combine and let it simmer for about 5 minutes until the mixture has thickened slightly.

Step 5

Reduce the heat to low and add the softened cream cheese. Stir continuously until the cream cheese is melted and well incorporated with the meat mixture.

Step 6

Mix in the shredded cheddar cheese a little at a time, stirring until melted and smooth after each addition.

Step 7

Fold in the drained green chiles, making sure the mixture is evenly combined. Let the dip simmer on low for another 5 minutes to allow the flavors to meld.

Step 8

Transfer the dip to a serving bowl and garnish with chopped fresh cilantro and sliced jalapeños if desired.

Step 9

Serve hot with keto-friendly chips, vegetable sticks, or pork rinds.
