  • 28 ounces Diced tomatoes, canned
  • 1 cup Beef broth
  • 3 tablespoons Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Oregano
  • 0.5 teaspoon Red pepper flakes
  • 1 medium Zucchini, diced
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

In a large pot over medium heat, add olive oil. Once hot, add chopped onion and bell peppers. Sauté until they begin to soften, about 4-5 minutes.

Add minced garlic and continue to sauté for an additional minute until fragrant.
