Ingredients

  • 2 cups Heavy cream
  • 1 cup Almond milk (unsweetened)
  • 0.5 cup Erythritol (or preferred keto-friendly sweetener)
  • 1 cup Frozen cherries (pitted and stemmed)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 4 large Egg yolks

Directions

Step 1

In a medium saucepan, combine the heavy cream and almond milk. Heat over medium-low, stirring occasionally, until the mixture begins to steam (do not let it boil).

Step 2

In a separate bowl, whisk the egg yolks until they are slightly thickened and pale in color.

Step 3

To temper the eggs, slowly add about 1 cup of the hot cream mixture into the egg yolks, whisking constantly. Once combined, pour the tempered egg mixture back into the saucepan with the remaining cream.

Add the erythritol and salt to the saucepan. Stir continuously and cook over low heat until the mixture thickens slightly and can coat the back of a spoon, about 5 minutes.
