Ingredients

  • 8 pieces chicken thighs (bone-in, skin-on)
  • 0.25 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 1 whole lemon, sliced

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large bowl, combine olive oil, lemon zest, lemon juice, chopped rosemary, chopped thyme, and minced garlic. Stir well to create a marinade.

Step 3

Add chicken thighs to the bowl and toss until each piece is well coated with the marinade. Let them marinate for at least 10 minutes.

Step 4

Season the marinated chicken thighs with salt and pepper on both sides.

Step 5

Heat a large oven-proof skillet over medium-high heat and add butter. Allow the butter to melt and start to bubble.

Step 6

Add the marinated chicken thighs, skin-side down, into the skillet. Sear them for about 5 minutes until the skin is golden brown and crispy.

Step 7

Turn off the heat and flip the chicken thighs so that they are skin-side up.

Step 8

Arrange lemon slices over the chicken thighs in the skillet.

Step 9

Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and juices run clear.

Step 10

Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Step 11

Serve warm with extra lemon slices for garnish if desired.
