Ingredients

  • 1 5-pound Whole chicken
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 5 large Garlic cloves
  • 2 tablespoons Fresh rosemary
  • 2 tablespoons Fresh thyme
  • 1 whole Lemon
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels and place it on a rack in a roasting pan.

Step 3

In a small bowl, combine olive oil, salt, and pepper.

Step 4

Peel and mince the garlic cloves. Add the minced garlic to the olive oil mixture.

Finely chop the fresh rosemary and thyme, add them to the olive oil mixture, and stir well.
