Ingredients

  • 4 pieces Fish fillets (such as cod or tilapia)
  • 0.5 cup Almond flour
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Egg
  • 2 tablespoons Olive oil
  • 4 wedges Lemon wedges, for serving

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a shallow bowl, combine almond flour, Parmesan cheese, parsley, dill, garlic powder, salt, and black pepper. Mix thoroughly to create the herb crust mixture.

Step 3

In another shallow bowl, beat the egg lightly with a fork.

Step 4

Rinse the fish fillets under cold water and pat dry with paper towels.

Step 5

Dip each fish fillet first into the beaten egg, ensuring it's fully coated.

Step 6

Then press the fish into the herb crust mixture, gently pressing down so the crust adheres to the fillet. Flip to coat the other side and place on the prepared baking sheet.

Step 7

Drizzle the coated fillets with olive oil to help them crisp up in the oven.

Step 8

Bake in the preheated oven for 18-20 minutes or until the fish flakes easily with a fork and the crust is golden brown.

Step 9

Remove from the oven and serve hot with lemon wedges on the side.
