Ingredients

  • 2 pounds Venison stew meat
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cloves Garlic, minced
  • 1 large Onion, diced
  • 3 medium Celery stalks, chopped
  • 2 medium Carrots, diced
  • 8 ounces Mushrooms, sliced
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 2 Bay leaves
  • 1 teaspoon Fresh thyme
  • 2 tablespoons Red wine vinegar
  • 1 medium Zucchini, chopped
  • 2 cups Spinach leaves

Directions

Step 1

Season the venison stew meat with salt and black pepper.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.

Step 3

Add the venison in batches to avoid overcrowding. Brown the meat on all sides, about 5 minutes per batch. Remove the browned meat and set aside.

Step 4

In the same pot, add the garlic, onion, and celery. Sauté for about 5 minutes until the onion is translucent.

Add the carrots and mushrooms to the pot and cook for another 5 minutes, stirring occasionally.
