Ingredients

  • 1 cup Broccoli florets
  • 1 cup Cauliflower florets
  • 1 medium Zucchini
  • 1 cup Almond flour
  • 2 tablespoons Ground flaxseed
  • 2 large Eggs
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil

Directions

Step 1

Chop the broccoli and cauliflower into small florets. Grate the zucchini and set aside.

Step 2

Steam the broccoli and cauliflower for about 5 minutes until tender. Drain any excess water.

Step 3

In a large mixing bowl, mash the steamed broccoli and cauliflower with a fork or masher.

Step 4

Add the grated zucchini to the bowl with the vegetables.

Step 5

Stir in the almond flour, ground flaxseed, eggs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well combined.

Divide the mixture into eight equal portions and shape each into a patty about 1/2 inch thick.
