Ingredients

  • 500 grams cauliflower florets
  • 300 grams broccoli florets
  • 2 medium zucchini, sliced
  • 1 large red bell pepper, chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 250 ml heavy cream
  • 120 grams cream cheese, softened
  • 200 grams cheddar cheese, shredded
  • 50 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

In a large pot, bring water to a boil and add a pinch of salt. Add the cauliflower and broccoli florets, and boil for 4-5 minutes until slightly tender. Drain and set aside.

Step 3

In a large skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.

Add the red bell pepper and sliced zucchini to the skillet, and cook for 5-6 minutes until they are softened. Set aside.
