Ingredients

  • 2 tablespoons olive oil
  • 1 pound keto-friendly sausage
  • 1 medium onion, chopped
  • 2 celery stalk, sliced
  • 1 large carrot, diced
  • 3 garlic cloves, minced
  • 1 medium zucchini, diced
  • 1 medium green bell pepper, chopped
  • 2 cups cauliflower florets
  • 14.5 ounces canned diced tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups fresh spinach leaves

Directions

Step 1

In a large soup pot, heat the olive oil over medium heat.

Step 2

Add the sausage and cook, breaking it up into smaller pieces with a wooden spoon, until browned and cooked through, about 5-7 minutes.

Remove the sausage from the pot and set aside. Discard most of the fat from the pot, leaving about 1 tablespoon.

Add the chopped onion, celery, and carrot to the pot. Sauté for 5 minutes or until the vegetables are starting to soften.
