Ingredients

  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 minced garlic cloves
  • 2 chopped celery stalks
  • 1 medium, chopped green bell pepper
  • 1 medium, chopped zucchini
  • 1 pound ground beef
  • 4 cups beef broth
  • 1 14-ounce can canned diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach

Directions

Step 1

In a large pot, heat olive oil over medium heat.

Step 2

Add chopped onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in minced garlic, chopped celery, and chopped green bell pepper, and continue to sauté for another 2-3 minutes.

Step 4

Add the chopped zucchini to the pot and cook for an additional 3 minutes, stirring occasionally.

Step 5

Push the vegetables to one side of the pot and add the ground beef. Cook the meat until browned, breaking it up with a spoon, about 7 minutes.

Once the beef is browned, combine it with the vegetables and add the beef broth and diced tomatoes to the pot.

Stir in the Italian seasoning, salt, and black pepper.

Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25 minutes.
