  • 6 cups Beef broth
  • 1 14-ounce can Diced tomatoes
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Keto-friendly tortellini
  • 4 cups Baby spinach leaves
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Fresh basil, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent and fragrant, about 3-4 minutes.
