Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 large garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium zucchini, diced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Step 3

Remove the beef from the pot and set aside, draining off excess fat if necessary.

Step 4

In the same pot, add the diced onion and bell pepper, and cook until softened, about 4-5 minutes.

Step 5

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 6

Add the diced tomatoes, beef broth, taco seasoning, cumin, chili powder, cayenne pepper, salt, and black pepper. Stir to combine.

Step 7

Return the cooked ground beef to the pot, and add the diced zucchini.

Step 8

Bring the soup to a boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.

Step 9

Taste the soup and adjust the seasoning as needed.

Step 10

Serve the soup hot, garnished with shredded cheddar cheese, sour cream, and fresh cilantro.
