Ingredients

  • 2 pounds Lamb shoulder, boneless
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 3 Celery stalks, chopped
  • 2 medium Carrots, chopped
  • 1 large Zucchini, chopped
  • 4 cups Beef broth
  • 1 cup Red wine
  • 2 tablespoons Tomato paste
  • 2 teaspoons Rosemary
  • 2 teaspoons Thyme
  • 1 Bay leaf
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Cut the lamb shoulder into 1.5-inch cubes and season with salt and pepper.

Step 2

In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes in batches, searing them on all sides until browned. Remove and set aside.

In the same pot, add chopped onion and cook for about 5 minutes until translucent.

Stir in the minced garlic, chopped celery, and carrots; cook for another 5 minutes.

Return the browned lamb to the pot, then add the chopped zucchini.
