Ingredients

  • 1 pound Ground Italian sausage
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 1 medium Onion, chopped
  • 2 medium Bell peppers, diced
  • 2 medium Zucchini, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Spinach, fresh
  • 6 large Eggs, beaten
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat.

Step 3

Add the ground Italian sausage and cook until browned, breaking it up with a spatula, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside.

In the same skillet, add the minced garlic and chopped onion. Sauté until the onion becomes translucent, about 3-4 minutes.

Add the diced bell peppers and sliced zucchini to the skillet. Cook for another 5 minutes, or until the vegetables are slightly tender.
