  • 500 grams beef stew meat
  • 1 medium swede (rutabaga), peeled and diced

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 celery stalks, diced
  • 2 medium carrots, peeled and sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the beef stew meat in batches, searing until browned on all sides. Remove meat and set aside.

In the same pot, add the butter. Once melted, add the chopped onion, celery, and carrots, sautéing until the onion is translucent.
